Grany's eggless pound cake

Anytime I bake, it's the pound cake comes out perfect. This can be used as a base for tart, tiramisu, fried icecreams and for many other desserts.
Curd, milk and water are used to substitute the eggs & it taste the best. Can be served with whipped cream for additional flavour.

Ingredients :
  1. All purpose flour - 200 gms
  2. Milk powder - 100 gms
  3. Powdered sugar - 160 gms
  4. Vanilla essence - 1 tsp
  5. Butter - 100 gms
  6. Baking powder - 2 tsps
  7. Baking soda - 1 tsp
  8. Curd - 1/2 cup
  9. Water - 1/2 cup
  10. Milk - 1/2 cup

Baking a cake :

  • Sift baking powder, baking soda, all purpose flour and milk powder together.
  • Beat butter till soft and add vanilla essence , sugar little by little and beat well.
  • Combine curd, water, milk together.
  • Fold the dry ingredients into the butter mixture alternately the liquid ingredients. Start and end with the flour.
  • Pour the cake mixture into the greased baking pan.
  • Bake at 160 C for 40 mins.

What do you consider 'curd'?
Lots of countries call it different things.
Australia-Cottage cheese
India- yogurt or butter milk
Sour cream, paneer the options go on!
I'm in Australia and would like to make this recipe. Please help, thanks.

Hello, I just came across this beautiful picture. I am a vegetarian and have been scounging the web for a very long time for something like this. A question for you: did you happen to use the curd that you make at home or was it store bought? The consistency of store bought yogurt is different from home made and one of my recipes flopped big time because I used home made instead of store bought yogurt.

picture of the cake looks perfect for a egg free cake. Yes...I am a vegetarian too and was looking for pound cake recipe to make for my twins 1 st birthday:) I am planning to do a stand-up (3D) cake and was delighted to find this recipe. Can you please post the measurements in cups instead of grams...even if it means its going to be a bigger cake. I know its easy to convert the measurements but I don't want to take chances...and would like the measurements from the pro.

Hello jegathpriyan,

butter = 230 grams/cup
100 grams is slightly less than 1/2 cup. Use stick butter and read the package. 100 grams is just about 1 stick.

powdered sugar is 130 grams/cup.
160 grams is slightly less than 1 1/4 cup.

U.S. all purpose flour is 100 grams/cup
200 grams = 2 cup

Milk powder is about 1/2 cup

I found this while looking for a vegetarian butter cake recipe. I have to make one soon for a birthday party. The photos look good and the recipe simple enough, so I'm looking forward to making it. Can I just clarify one thing? You have used powdered sugar here, so I'm correct in assuming it's confectioner's sugar and not castor sugar?

What size cake does your recipe make or the size of the baking pan you use?

When you refer to powdered sugar - is that castor sugar?

This recipe looks very good, I will make it pretty soon, I love to bake and being Swaminaryan satsangi, always in search for good eggless recipes. Can you pls specify the pan dimensions? you said 36 cm, did you mean 13 x 9 inch or some thing else?

btw.. doesn't the curd make the cake sour? Is there an alternative ingredient incase I don't wish to add yogurt? Can I replace it with oil?
